Day 2 and I am starting to get the hang of this. Losing the ‘baby weight’ that I have put on since adopting the Witchlings might not be so tough after all! Although admittedly it is early days!
Thought for the day… I have now put on a stone for every year I have had The Witchlings. Just imagine what size i would be if I left it until they left home!
Day 2 of my eating plan (I am NOT going to call this a diet!) went like this.
- Breakfast: 28g sachet of microwave porridge made with semi skimmed milk.
This is great when you haven’t got time for pans and stirring and all that palaver but want a satisfying healthy breakfast that will see you through the morning. The football boots were nowhere to be found so the porridge was just at the right temperature when I eventually got to eat it.
- Lunch: Leftover noodles from last night with my special low fat spicy sauce. Very Low Fat Yoghurt
Extremely busy afternoon at work so drank 2 cans of diet coke but managed to steer clear of the chocolate digestives!
- Dinner: Pasta with vegetarian bolognese sauce – made from scratch with all organic ingredients!
Dithered a bit about dinner as I was tempted to just open a jar of oily sauce and pour it over. This is usually the quick fix to ‘Mum, what’s for tea?’ It’s easy to take short cuts when you have a busy lifestyle and demanding children. But in the long run, if you take a little extra time to make things from scratch, you end up with a healthier family and a happier, healthier SLIMMER you!
- Easy Vegetarian Pasta Sauce
1. Chop 2 leeks and a small onion
2. Crush 2 cloves of garlic
3. Dice 2 carrots into 1cm cubes
4. Open a small can of sweetcorn kernels
5. Saute the garlic, leeks and onions in a large frying pan – use spray oil if it’s not non-stick
6. Add a can of chopped tomatoes, 2 Tbsp Tomato Puree, and a vegetable stock cube
7. Add the carrots and around 330ml boiling water (you can add more according to how thin you like your sauce.
8. Simmer on a medium heat until the carrots are cooked and season with salt and cracked black pepper to taste.
The Witchlings lapped this up, with funky wholewheat pasta shapes and there wasn’t an additive or preservative in sight!
